The Japanese Suribachi: Grinding Sesame at the Table
Share
A suribachi is a Japanese mortar bowl with fine ridges inside. It is made for the small transformations that bring a meal together: sesame turned fragrant, miso softened into dressing, or herbs crushed just before serving.
Why the ridges matter
The comb-like interior catches ingredients as the pestle moves around the bowl. Begin with toasted sesame, using a gentle circular motion until its aroma rises. The goal is not a perfectly smooth paste, but a texture that still feels alive.
Use it for the final step
Keep the suribachi for dressings, dipping sauces, and small side dishes rather than large-scale prep. On the table, it can move directly from grinding to serving, bringing a little warmth and texture to the meal.
Care after use
Rinse promptly and use a small brush to reach the ridges. Let the bowl dry completely before storing so the unglazed texture remains clean and ready.
