Because of export restrictions, many fresh ingredients cannot be shipped overseas — but within those limitations, we carefully select items that still capture the true taste of Japan.

Inside is a traditional-style Japanese soba made by a long-established noodle shop founded in 1918 (Taisho 7). Using an 80% buckwheat blend, it offers the deep aroma, firm bite, and clean finish that Japanese locals recognize as “real soba,” not tourist-style noodles.

We pair it with dried organic green onion from Ehime Prefecture, gently dried to preserve its natural sweetness and flavor. It rehydrates softly in hot broth and adds quiet umami without overpowering the soba.
